Sesame Chicken Salad
A meal that is just as good cold as it is hot.
Ingredients (Serves 4)

| 12 cups | water, plus 2 tablespoons for serving method | |
| 1/3 pound | thin egg noodles (angel hair or vermicelli) | |
| 2 | carrots, grated (about 1-1/2 cups) | |
| 2 | seedless English cucumbers, halved lengthwise, grated and squeezed to remove excess water (about 2 cups) | |
| 1 pound | cooked skinless chicken, julienned | |
| 1 teaspoon | safflower or corn oil | |
| 5 | large eggs | |
| 1/2 teaspoon | salt | |
| 1/2 cup | finely minced green onions |
| Korean Sesame Dressing | |
|---|---|
| 5 teaspoons | Japanese rice vinegar |
| 3 1/2 tablespoons | toasted sesame oil |
| 3 tablespoons | sweetened rice wine (mirin) |
| 2 tablespoons | soy sauce |
| 1 tablesppon | sugar |
| 2 tablespoons | minced garlic |
| 2 teaspoons | hot chili paste (or to taste) |
| 1/4 cup | crushed toasted sesame seeds |
Instructions
Sesame Chicken Salad
- Bring water to a boil in a large pot. Add noodles and cook until just tender, 3 to 5 minutes. Drain in a colander, rinse under cold running water, and drain again.
- Toss noodles, carrots, cucumbers and half of sesame dressing in a large bowl. Arrange on a serving platter or a bowl, leaving a space in centre for chicken. Arrange chicken in centre.
- With a paper towel dipped in oil, wipe inside of a 9- or 10-inch nonstick frying pan. Heat over medium-high heat until hot (a little water sprinkled on it should evaporate immediately). Ladle 1/4 cup of beaten eggs into pan and tilt pan to form a thin circle of egg. Cook briefly until set, about 10 seconds. Flip over using a spatula and cook very briefly on other side. Remove and let cool, stacking the pancakes on a plate as you cook remaining egg. There should be about 7 pancakes. Cut them into quarters and arrange them around the outer edge of serving platter.
- Pour remaining dressing over chicken and sprinkle with minced green onions. To eat, spoon some noodles and chicken onto an egg pancake, roll up, tucking in edges, and eat with your fingers.
Korean Sesame Dressing
- Combine all ingredients, stirring to dissolve the sugar.
- Transfer to a serving dish and serve at room temperature.
- Refrigerated, the dressing will keep in a tightly covered container for up to a week.
