Ingredients (Serves 12)

| 1 ½ cups | finely ground digestive cookies (about 16) |
| ¼ cup | superfine sugar |
| ¼ cup | unsalted butter, melted |
| ½ tsp | dried lavender, finely chopped |
| Filling: | |
| 1 | 250-g package light cream cheese, room temperature |
| ¾ cup | superfine sugar |
| 1 cup | quark cheese* |
| 1 cup | 35% cream, whipped to soft peaks |
