Lemon Gnocchi With Arugula & Parmesan

One pot, one pan – it doesn't get any easier! We've kept this vegetarian but adding cooked chicken or sausage would be delicious.

Ingredients (Serves 4)

1/4 cup extra-virgin olive oil
2 teaspoons minced garlic
1 500 g package gnocchi
1 cup baby arugula, packed
2 lemons, zested and juiced
1/4 cup shaved Parmesan

Instructions

  1. Put a large pot of salted water on to boil. In a sauté pan, heat oil with garlic. Remove from heat before garlic starts to brown.
  2. Cook gnocchi in boiling water according to package instructions. Drain and add to sauté pan with oil and garlic. Gently stir to coat gnocchi with flavoured oil.
  3. Mix in arugula, lemon zest, juice and a good twist of cracked black pepper. Top with shaved Parmesan.

Nutrients per serving: 398 calories, 17 g fat, 10 g protein, 49 g carbs, 3 g fibre.

FYI - I made this recipe last week after it appeared in Wish. Please tell your readers that the recipe requires adjustment - one lemon is more than plenty (two lemons is overpowering; instead of adding a little citrusy flavour, the lovely oil and garlic combination gets decimated by the lemon juice....), and the juice of half a lemon is probably sufficient. Otherwise, it was a simple and visually appealing meal!
