Chef’s Tip: Work fast when folding the whipped cream into the cheese and pudding mixture as it tends to set quickly.

Time Saver: "If you’re in a pinch, use Cool Whip – and take it out of the freezer as soon as you get home, so you don’t need to defrost."

Elevate Dessert: Individual servings are a nice touch and take little or no extra effort.

Strawberry Tiramisu

Creamy and velvety, this spinoff of the famous Italian tiramisu is less fattening, easier to make and sure to be a hit!

Ingredients

½ cupmilk
½ cupespresso or coffee
1package vanilla instant pudding powder
185-g package ladyfingers
4 or 5 squaresbittersweet chocolate
1250-g package cream cheese
1 cup35% cream
2 pintsfresh strawberries

Instructions

  1. Prepare espresso or coffee and let cool. Meanwhile, using an electric mixer, beat softened cream cheese until smooth.
  2. Blend in milk and half the espresso. Add in instant pudding powder and mix until creamy.
  3. Whip cream to a soft peak and fold in. Brush remaining espresso over ladyfingers.
  4. Line bottom of glass bowl with half of the ladyfingers and top these with 1 pint of sliced fresh strawberries. Cover with half of cheese mixture, and sprinkle with 3 squares grated bittersweet chocolate.
  5. Make second layer. Garnish with any remaining grated chocolate and berry slices.

Nutritional information

Nutrients per serving: 286 calories, 19 g fat, 5 g protein, 30 g carbohydrates, 2 g fibre. Excellent source of vitamin C.

This one is fabulous!!!! I made it for this evening using rapberries in place of the strawberries as I love them with the bittersweet chocolate. This is almost sinful, it is so decadent!!!
Will use this recipe often with both fruits.
