Hot Cereal Of Wild Rice, Grains & Dried Fruit

Make this delicious cereal ahead of time and warm it up in the microwave.

Ingredients (Makes 8 servings )

1/2          cup wild rice
8 cups water
1/2 cup pearl barley
1/2 cup Irish oats
1/4 cup firmly packed brown sugar
1-1/2 tablespoons butter
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon allspice
1/2 cup sliced dried apricots
1/2 cup dried cranberries

Instructions

  1. Preheat oven to 375 F.
  2. In a small saucepan, simmer wild rice in 2 cups of water for 20 minutes, then drain.
  3. In a large bowl, gently mix together pearl barley, Irish oats, brown sugar, butter, salt, ground cinnamon, allspice, cooked wild rice and 6 cups of water.
  4. Pour into a 2.5-quart non-stick baking sih, cover loosely with aluminum foil and bake for about 1-1/2 hours.
  5. Remove from oven, stir in dried apricots and cranberries.

Sounds very tasty and full of nutrient-rich ingredients. However, I would not include the sugar as the dried fruit and spices add sweetness. A little sugar or honey could be added after cooking, according to personal taste. I also question whether the butter and salt are really necessary.
