Flaxseed Bison Burger

Eating this hamburger is actually good for your heart and can help lower your cholesterol

Ingredients (Makes 4 burgers)

1 tbsp canola oil
3 cloves garlic, minced
1 cup finely chopped shallots
1/2 cup flaxseed
1 tbsp mustard seeds
1 omega-3 egg
1/2 cup breadcrumbs or panko
1 tsp black pepper
2 tsp kosher salt
2 lb ground bison meat

Instructions

  1. Heat oil in a frying pan over medium-high. Sauté garlic and shallots until soft but not brown. Set aside to cool.
  2. Using a mortar and pestle, crush flaxseed and mustard seeds together. Alternatively, you could gently pulse in a food processor.
  3. In a large bowl, combine all ingredients with bison meat and shape into 4 patties.
  4. Grill or pan-fry patties to medium-rare.

Nutritional information

Nutrients per serving: 671 calories, 51 g protein, 40 g fat, 25 g carbs, 7 g fibre, 4 g omega-3. Excellent source of iron, zinc and dietary fibre.

Healthy Butcher:
- 565 Queen Street West (just west of Spadina)
- 298 Eglinton Ave. W. (on the northeast corner of Avenue Rd. and Eglinton)
- There is also a Kitchener location at 25 Rouge St.
