Huevos Rancheros
Get cracking with this layered Mexican favourite at suppertime or anytime. Note: This recipe makes one serving.
Ingredients (Serves 1)
| 2 | 6-inch flour tortillas |
| 1/2 cup | refried beans |
| 1/4 cup | grated extra-old white cheddar cheese |
| 2 tbsp | tomato salsa (Try making your own with our Best-Ever Salsa recipe.) |
| 2 | eggs |
| sour cream, for garnish (optional) |
Instructions
- Preheat oven to 350°F.
- Place one flour tortilla on a baking sheet and spread tortilla with refried beans to edge.
- Over beans, layer cheese then salsa.
- Put in oven until cheese has melted and filling is heated through.
- Top with another tortilla and place back in oven to warm for 3 minutes. Meanwhile, start frying eggs - 2 per person.
- Place fried eggs on top of tortilla. Garnish with more tomato salsa and a dollop of sour cream.

Nutrients per serving: 780 calories, 39 g fat, 41 g protein, 67 g carbs, 11 g fibre. Excellent source of vitamins A, B12, D and E, folate, thiamin, riboflavin, pantothenic acid, calcium, iron, phosphorous, zinc and magnesium.
