Huevos Rancheros

Get cracking with this layered Mexican favourite at suppertime or anytime. Note: This recipe makes one serving.

Ingredients (Serves 1)

 
2 6-inch flour tortillas
1/2 cup refried beans
1/4 cup grated extra-old white cheddar cheese
2 tbsp tomato salsa (Try making your own with our Best-Ever Salsa recipe.)
2 eggs
sour cream, for garnish (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Place one flour tortilla on a baking sheet and spread tortilla with refried beans to edge.
  3. Over beans, layer cheese then salsa.
  4. Put in oven until cheese has melted and filling is heated through.
  5. Top with another tortilla and place back in oven to warm for 3 minutes. Meanwhile, start frying eggs - 2 per person.
  6. Place fried eggs on top of tortilla. Garnish with more tomato salsa and a dollop of sour cream.

Nutritional information

Nutrients per serving: 780 calories, 39 g fat, 41 g protein, 67 g carbs, 11 g fibre. Excellent source of vitamins A, B12, D and E, folate, thiamin, riboflavin, pantothenic acid, calcium, iron, phosphorous, zinc and magnesium.
