Oatmeal Cranberry Flaxseed Cookies

These tasty and healthy cookies are a real favourite with the kids!

Ingredients (Makes 2 dozen)

½ cup canola oil
¼ cup brown sugar
½ cup granulated sugar
1 omega-3 egg
1 tsp vanilla extract
½ cup all-purpose flour
½ cup flaxseed, ground
½ tsp baking soda
½ cup dried cranberries
1 cup rolled oats

Instructions

  1. Preheat oven to 350°F. In a bowl, thoroughly mix canola oil and sugars together. Add egg and vanilla, mixing well.
  2. Add flour, ground flaxseed and baking soda and mix until well combined. Stir in cranberries and rolled oats.
  3. Drop generous-sized tablespoons of the dough, 2 inches apart, on a parchment-lined baking sheet. Bake for 10-12 minutes.

Nutrients per cookie: 86 calories, 1 g protein, 4 g fat, 10 g carbohydrates, 1 g fibre, 0.5 g omega-3.

These cookies are amazing! They're full of flavour, moist and chewy (underbake them ever so slightly to get a chewy texture, if that's your preference). Looking at the nutritional information, they actually are healthy (well, relative to some other cookies you may be snacking on!). They are delicious - hard to believe they don't have twice the amount of calories and fat indicated here - thank goodness!

I have been looking for a healthier cookie recipe which contained dried fruit and flaxseed. These are fabulous. Lots of texture and layered with flavor. After I ran out of dried cranberries, I substituted dried cherries.......great as well.
