Walnut Parsley Pesto
Toss this pesto with a whole-grain pasta, add to sandwiches or brush on grilled meats.
Ingredients (Makes 1 cup)
| 2 | cloves garlic |
| 1/2 cup | fresh Italian parsley leaves |
| 1/4 cup | walnut pieces |
| 1/3 cup | canola oil |
| 3 | Thai chilies (optional) |
Instructions
- Place all ingredients into the bowl of a food processor.
- Pulse until the mixture has come together.
- Toss with hot pasta.
Nutritional information
Nutrients per serving: 381 calories, 12 g protein, 13 g fat, 57 g carbs, 7 g fibre, 1 g omega-3. Excellent source of magnesium and dietary fibre.
