Walnut Parsley Pesto

Toss this pesto with a whole-grain pasta, add to sandwiches or brush on grilled meats.

Ingredients (Makes 1 cup)

2          cloves garlic
1/2 cup fresh Italian parsley leaves
1/4 cup walnut pieces
1/3 cup canola oil
3 Thai chilies (optional)

Instructions

  1. Place all ingredients into the bowl of a food processor.
  2. Pulse until the mixture has come together.
  3. Toss with hot pasta.

Nutritional information

Nutrients per serving: 381 calories, 12 g protein, 13 g fat, 57 g carbs, 7 g fibre, 1 g omega-3. Excellent source of magnesium and dietary fibre.
