Crab-Fried Noodles
Keep laksa paste on hand in your freezer to whip up these noodles anytime. Depending on how spicy you like your food, experiment with the amount of paste in the recipe.
Ingredients (Serves 4)
| 1 | tbsp chopped fresh ginger |
| 1 | clove garlic, roughly chopped |
| 1/4 | cup shallots, roughly chopped |
| 1 | tbsp red curry paste |
| 1/2 | cup coconut milk |
| 1 | tbsp vegetable oil |
| 1/2 | lb Chinese noodles, cooked |
| 2 | tbsp laksa paste |
| 1 | cup lump crab meat |
| 1/2 | cup bean sprouts |
| 1/2 | cup water chestnuts, chopped |
| 1/2 | cup snow peas, blanched |
| 2 | tbsp Thai basil |
Instructions
- To make laksa paste, place first six ingredients in a blender and process until smooth.
- In a large sauté pan, warm laksa paste over medium heat.
- Add remaining ingredients. Mix and heat thoroughly.
