Tuscan White Bean Purée Crostini
This healthy snack is not only good for digestion, it can also lower your cholesterol and your risk of heart disease
Ingredients (Makes 2 cups)
| 2 | tablespoons olive oil |
| 1 | large shallot, finely chopped |
| 2 | cloves garlic, finely chopped |
| 2 | cups canned white beans, drained |
| 6 | sage leaves |
| 2 | tablespoons extra virgin olive oil |
| 2 | teaspoons kosher salt |
| 1 | tablespoon lemon juice |
| 1 | whole wheat baguette, cut into 1/2 -inch slices |
Instructions
- Heat olive oil in a skillet over medium heat.
- Add shallots and garlic and cook until soft.
- Add white beans and mix thoroughly.
- Transfer mixture to a food processor. Add sage leaves, lemon juice, salt and extra virgin olive oil. Purée until smooth.
- Spread on toasted baguette.

Nutrients per piece: 68 calories, 2 g fat, 2.2 g protein, 8.7 g carbohydrates, 1.5 g fibre.
