Roasted Chickpeas

A healthy high-fibre snack, easy to season with your favourite spices.

Ingredients

1 cup of dried chickpeas

Instructions

  1. Rinse 1 cup of dried chickpeas and cover with water. Allow them to soak overnight, then drain. (If using canned, rinse, drain and pat dry.)
  2. Spread on a baking sheet and roast at 400 F for 30 minutes or until tender.
  3. Remove from oven, toss with your choice of seasoning. Try combinations like olive oil, salt and lemon, or soy sauce, sesame oil and chili pepper. (1-2 teaspoons each per 1 cup of chickpeas.)

Nutritional information

Nutrients per cup serving: 197 calories, 9 g protein, 6 g fat, 27.9 g carbohydrates, 4.1 g fibre. Excellent source of folic acid.

I made these and tossed them with different vinegar/oil based salad dressings -- zesty italian, basil parmesan and balsamic vinegar with maple syrup. They were wonderful. Do I have to store them in the fridge?
