Rainy Day Eggs
This comfort food dish is sure to brighten your mood on a dreary day
Ingredients (Makes 6 servings)
| 6 | eggs |
| 1/2 | tbsp unsalted butter |
| 1 | tbsp all-purpose flour |
| 1-1/2 | cups skim milk |
| 1/2 | tsp kosher salt |
| 1 | tbsp curry powder |
| 3 | green onions, finely chopped |
| freshly ground black pepper |
Instructions
- Place eggs in a pan and cover with cold water. Bring to a boil and cook eggs for 7 minutes.
- Remove pot from heat, run eggs under cold water and set aside.
- In the same pot, melt butter and add flour, and cook for 2 minutes. Add milk in a stream, whisking vigorously until mixture is thick and smooth. Add salt and cook for approximately 10-12 minutes until consistency resembles sour cream. Add curry powder.
- Carefully peel eggs and roughly chop.
- Combine the sauce with eggs and stir in green onions.
- Serve on crustless dry toast and sprinkle with cracked black pepper.
