Grilled Vegetables

Whether the sun is shining or the moon is rising, share the joys of this recipe and dine alfresco.

Ingredients (Makes 6 servings)

4          cups pattypan squash
1 small red onion, diced
2 tablespoons olive oil
2 tablespoons chopped Italian parsley
1 tablespoon lemon zest
salt and pepper

Instructions

  1. Toss squash, onion, olive oil, and salt and pepper together in a bowl.
  2. Transfer to vegetable grilling basket and grill over medium-high heat for approximately 10 minutes.
  3. Remove from basket and mix in parsley and lemon zest.

Nutritional information

Nutrients per serving: 67 calories, 5 g fat, 1 g protein, 6 g carbohydrates, 2 g fibre.
