Grilled Vegetables
Whether the sun is shining or the moon is rising, share the joys of this recipe and dine alfresco.
Ingredients (Makes 6 servings)
| 4 | cups pattypan squash |
| 1 | small red onion, diced |
| 2 | tablespoons olive oil |
| 2 | tablespoons chopped Italian parsley |
| 1 | tablespoon lemon zest |
| salt and pepper |
Instructions
- Toss squash, onion, olive oil, and salt and pepper together in a bowl.
- Transfer to vegetable grilling basket and grill over medium-high heat for approximately 10 minutes.
- Remove from basket and mix in parsley and lemon zest.

Nutrients per serving: 67 calories, 5 g fat, 1 g protein, 6 g carbohydrates, 2 g fibre.
