Apple Brown Betty

A Wish reader's own delicious spin on an old microwave cookbook favourite

Ingredients (Serves 6)

1/3 cup granulated sugar
1/3 cup packed brown sugar
pinch salt
1/4 cup all-purpose flour
1 tsp ground cinnamon
1/2 tsp ground nutmeg
2 tsps fresh lemon juice
1 vanilla bean
6 cups peeled apple slices
3 tsps unsalted butter
1/2 cup breadcrumbs

Instructions

  1. In a large bowl, combine sugars, salt, flour, cinnamon, nutmeg and lemon juice. Use a sharp knife to slice the vanilla bean in half lengthwise. Separate the seeds from the outside skin by scraping the blade of the knife along the inside of the bean. Add the seeds to the mix.
  2. Mix in apple slices, stirring to coat apples. Spoon into 2-quart microwaveable casserole dish.
  3. Melt butter in microwave and mix with breadcrumbs and a pinch of cinnamon. Sprinkle over apple mixture and cook on high in the microwave for 10-14 minutes or until apples in centre are tender, turning the dish once.
  4. Let stand for 2 minutes and serve. Great with whipped cream or vanilla ice cream.

Nutritional information

Nutrients per serving: 312 calories, 7 g fat, 2 g protein, 64 g carbohydrates, 4 g fibre. High source of fibre. Excellent source of vitamin D.

This is a very easy receipt to make and will be a winner for guests and the family!

The delicious taste of apples, cinnamon, nutmeg with a touch of vanilla will be a welcome treat that is not only nutritional, but a mouth watering favorite!

Simply verry "delicieux"!!! Simple, my kids gave it a A+. But I did add a bit of Canadian Maple Syrup and it was even better!!!
