Easy Lemon Spinach Salad

A salad hearty enough to be a meal.

Ingredients (Makes 2 servings)

6          cups baby spinach, washed
2 hard-boiled eggs, cut into quarters
4 slices country ham cut into 1/2-inch-thick strips
1 cup croutons
Lemon Vinaigrette

Instructions

  1. Make vinaigrette.
  2. In a large bowl, toss spinach with vinaigrette.
  3. Divide spinach greens between two plates and top with ham, eggs and croutons.

Nutritional information

Nutrients per serving: 530 calories, 38 g fat, 29 g protein, 20 g carbs, 5 g fibre. Excellent source of vitamins A, B6, B12, C and E, folate, niacin, thiamin, riboflavin, iron, phosphorous, zinc and magnesium.

This looks absolutely delicious. I can't wait to try it.As someone who must eat a high fibre diet for medical reasons, this is quick & easy. I may try substituting the ham with cooked boneless skinless chicken as I am trying to stay away from processes meats.
