Lime Chicken with Rice

Easy and delicious – kids will gobble it up!

Ingredients (Serves 4)

1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 clove garlic, minced
1 teaspoon dried thyme
1 teaspoon paprika
4 boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup finely diced onion
2 tablespoons olive oil
2 limes, zested and juiced
1/2 cup chicken stock
4 servings cooked rice

Instructions

  1. In a large bowl mix together salt, pepper, garlic, thyme and paprika.
  2. Mix chicken with spices until coated.
  3. In a large sauté pan over medium heat, cook onion in olive oil for 2-3 minutes until soft.
  4. Add chicken and cook for approximately 10 minutes or until cooked through.
  5. Remove chicken from pan and deglaze* by adding chicken stock and lime juice.
  6. Cook for a few minutes until sauce begins to thicken. Add chicken and stir, cooking for one more minute.
  7. Serve over warm rice and sprinkle with lime zest.

Nutritional information

Nutrients per serving with 1/2 cup long-grain rice: 482 calories, 12 g fat, 64 g protein, 25 g carbohydrates, 1 g fibre. Excellent source of vitamins B6 and B12. (Folate, niacin, pantothenic acid, zinc and magnesium.)

I added a cup or so of frozen cubed mango and a handful of chopped cilantro to brighten up the flavour. This was a quick and easy dinner and everyone enjoyed it!

Originally made this from the issue in Sept 2005 and have made it several times since. Easy, tasty and versatile. I mix up spices the night before and is very quick to put together after a long day at work.
I add chopped fresh cilantro and cashews.
Since I watch my carbs, usually have over soy noodles or with romaine lettuce.
Very enjoyable and tasty!!

Absolutely delicious!! Simple to put together and the lime flavour was fantastic. I put aside the chicken pieces for my kids before I deglazed my pan though, as they wouldn't have enjoyed the strong tartness of the lime juice.

I made this recipe tonight for dinner and absolutely loved it!!! Although, i may add a little less lime juice next time it was a little overpowering for me.. but would love to try it wih cashews and cilantro from comments above that sounds delicious!!!!!!
