Grilled Striploin Steak Baguette

This sandwich is an easy and satisfying dinner for two. We love it with the red onion marmalade* but if you are short on time pick up your favourite sandwich condiment from the grocery store.

Ingredients (Serves 2)

1/4 cup olive oil
3 sprigs fresh rosemary, picked and chopped
2 tsp chopped Italian parsley
2 tsp picked fresh thyme
2 cloves garlic, peeled and finely chopped
1 tbsp kosher salt
1 tbsp cracked black pepper
1 7 oz. trimmed striploin steak
6 tbsp red onion marmalade*
1 baguette, cut for 2 sandwiches

Instructions

  1. Preheat grill.
  2. In a bowl combine first 7 ingredients. Rub this herb mixture onto steak and grill to medium rare.
  3. Meanwhile, spread 3 tablespoons red onion marmalade on bottom halves of baguette.
  4. Divvy up sliced striploin between baguette halves and top with 3 more tablespoons marmalade. Close sandwiches and dig in.
