Join the 20-Minute Supper Club»Tacos for Two
Tacos you won't want to share even though there are enough for two.
Ingredients
| 1 | avocado |
| 1 tbsp | lime juice |
| 1/2 tsp | salt |
| 2 tbsp | cooking oil |
| 2 tbsp | yellow diced onion |
| 1/2 tsp | chili powder |
| 3 | medium tomatoes, diced |
| 1 | tomato finely diced |
| 1 cup | leftover chicken |
| 1 cup | shredded red cabbage |
| 4-6 inch | corn tortillas |
Pepper to taste |
Instructions
Mash avocado and add salt and pepper. Set aside
Add oil to skillet. Over medium heat cook onion until translucent.
Add chili powder, chipotle pepper and tomatoes. Cook five min. Stir in chicken and heat until chicken is heated through.
Assemble tortillas with a scoop of chicken mix, avocado, cabbage and a sprinkle of lime juice. You can also add cheese if you like but it's not necessary.
