This dish is protein-rich, delicious hot or cold and its flavours improve the day after cooking, making it a perfect take-to-work lunch.
Ingredients (Serves 4-6)
Parmesan Crisps| 1/2 cup | freshly grated Parmesan |
| 2 tsp | all-purpose flour |
| 1 tsp | finely ground porcini mushrooms |
| 3 cups | cooked orzo |
| 1 cup | cup drained and chopped canned tomatoes (2 tbsp juice reserved) |
| 1/2 pkg | chopped spinach, defrosted and squeezed dry |
| 2 tbsp | orange marmalade |
| 2 tbsp | rice vinegar |
| 1 clove | garlic, minced |
| 1 tsp | salt |
| 1/2 tsp | ground cumin |
| 1/4 tsp | freshly ground pepper |
| 1/4 cup | olive oil |
| 4 | hard-boiled eggs, peeled and quartered |
Instructions
Parmesan Crisps
- Combine all ingredients in a small bowl.
- Heat a non-stick skillet over high heat. For each crisp, sprinkle a heaping tablespoon of the cheese mixture into skillet. Cook until crisp and cheese has melted. Remove skillet from heat, allow crisp to firm up and then transfer to a rack to cool.
- Place cooked orzo in a large serving bowl and stir in tomatoes and spinach.
- In a small bowl, whisk together remaining ingredients (except eggs), pour over salad and toss. Garnish with hard-boiled eggs and Parmesan crisps.
