Warm Steak Salad with Creamy Salsa Dressing

This dressing is also delicious served with leftover roast beef or chicken.

Ingredients (Serves 2)

3/4 lb sirloin steak
 Extra-virgin olive oil
1 cup finely chopped tomato
6 tbsp sour cream
2 tbsp finely chopped cilantro
1 tbsp fresh lemon or lime juice
1 jalapeño pepper, seeded and finely chopped
4 cups Romaine lettuce, shredded

Instructions

  1. Rub steak on both sides with oil and season with salt and pepper. Broil, barbecue, or sear until done to your liking.
  2. In a small bowl, mix tomato, sour cream, cilantro, lime or lemon juice, jalapeno, pepper to taste and 1/2 tsp salt.
  3. Place lettuce on a platter. Slice steak and arrange it on lettuce. Spoon tomato mixture over steak.

Nutrients per serving: 10.6 g carbs, 3.6 g fibre, 42.8 g protein, 17.7 g fat, 374 calories.

I tried the above recipe but substituted the sour cream with hummus and the B.B.q'd steak with chicken....hmmm, hmmm good!
