Join the 20-Minute Supper Club»Chili-Caramelized Pork on Cucumber Salad
A sweet fresh meal that everyone at the table will love.
Ingredients (Serves 4)
| 1 tbsp | sesame oil |
| 650 g | pork tenderloin, trimmed and sliced |
| 1 tbsp | grated ginger |
| 1 | large mild red chili, seeded and chopped |
| 1/4 cup | soy sauce |
| 2/3 cup | brown sugar |
| 1 tbsp | fish sauce |
| 2 tbsp | fresh lime juice |
| 2 | cucumbers, thinly sliced |
| 1/2 cup | bean sprouts |
| 1/2 cup | mint leaves |
| 1/2 cup | cilantro leaves |
Instructions
- Heat oil in a large skillet or wok over high heat.
- Add pork and cook each side for 2 minutes or until just cooked through. Remove from pan and set aside.
- Reduce to low heat and add ginger, chili, soy sauce, sugar, fish sauce and lime juice to pan. Stir to dissolve sugar and then simmer for 8 minutes or until thickened.
- Add pork to skillet and toss in sauce to coat.
- Combine cucumber, bean sprouts, mint and cilantro and serve with pork.
